Lavender Cookies | Vegan + Gluten-Free
These lavender pecan cookies are the best! They’re vegan and gluten-free and so delicious, everyone loves them. Lavender is of course, a well-known medicinal plant used to relieve anxiety, promote sleep, and ease digestive complaints. You can find out more about the medicinal properties of lavender, here. It’s less well-known as a culinary herb, but I’m ready to change that. Lavender adds a subtle, complex floral note that works in both sweet and savory recipes. - 1-1/4 cup almond flour
- 1/4 tsp baking soda
- pinch of salt
- 1/4 cup coconut oil, melted
- 2 tbsp honey or maple syrup
- 1 tsp vanilla extract
- 1-2 tbsp dried Lavender
- 1/2 cup pecans, finely chopped
Preheat oven to 350°F. Cover baking sheet with parchment paper. Mix almond flour, baking soda, and salt in medium size bowl. In a separate bowl, whisk together coconut oil, honey, and vanilla. Add wet ingredients to dry and mix. Fold in lavender and pecans. Form dough into 1 inch balls and gently press onto baking sheet. Bake for 6-7 minutes. Cool on baking sheet. Enjoy with your favorite herbal tea.
Makes 10-12 Cookies
